Meatball, Cheese, Sweetcorn & Pepper Quiche

I really could not decide what to do with my meatballs so this was a last minute dish thrown together and which tasted fabulous.

Prep Time: 10 minutes
Cooking Time: 30 minutes

Ingredients
Richmond Mini Meatballs
1/2lb Cheddar Cheese
4 Eggs
Tin Sweetcorn with Peppers
Salt & Pepper to season
Pack of Shortcrust Pastry
  1. Line a dish with the shortcrust pastry and blind bake for 10 minutes.
  2. Grate the cheese.
  3. Whisk the eggs adding salt and pepper to season.
  4. Add the meatballs, sweetcorn & peppers, cheese and egg mixture to the pastry case and bake for 30 minutes at 180 degrees.
I served this with oven chips and a watercress and spinach leaf salad with honey and mustard dressing.
